How to choose your oyster ?

There are different boxes to check before tasting Châtelaillon oysters:

H3 The Freshness

  • Preferably buy them in a basket to keep them flat
  • Be sure to look at the shipping date on the bourriche label
  • Store them for about 10 days in the fridge or in a cool place, between +5°C and +10°C

H4 The type: flat or hollow

  • The flat oyster is rarer, more expensive and distinguished by its strong iodine taste
  • The hollow oyster, which is more common, is divided into three varieties depending on their space and maturation time: fines, specials and claires pushes
H5 The Gauge
  • The higher the gauge number, the smaller the oyster!
  • For flats :
    • 000, the largest: between 100 and 200 g.
    • 00: 90 to 100 g
